"Creamy almond pudding" is the plainest of titles, and it is the one new video on Julius Fiedler's channel this week. Julius, the German creator behind @bakinghermann, built his following on traditional plant-based dishes he learns on his travels, and this time the trail led to a dairy-free almond custard flavored with cinnamon and lemon.
It found its crowd fast: past 350,000 views in its first day, far ahead of anything else on the channel right now. The comment section quickly turned Catalan. Several viewers recognized a family dessert, one remembering a grandmother's crema catalana, while others stepped in to say the almond version is closer to menjar blanc and that crema catalana is a different thing altogether, sometimes called Crema de Sant Josep. One Catalan viewer praised the texture but had never seen it with cinnamon.
The other big conversation is practical: can you use almond milk from a carton? The most liked comment doubts it, pointing out how few almonds most store-bought versions contain, while another viewer in the EU reports making it with a carton and liking the result, though not the cinnamon and lemon together. A third simply notes that Julius poured what looked like a month's rent of almonds onto the counter.
Behind the pudding, "3 tips for better lentils" keeps cooking at three weeks old, now near two and a half million views, and the Syrian lentil-and-pasta stew from mid-September still draws a steady stream. Overall the channel ran a little below its usual daily pace.
Among cooking channels of about a million subscribers, Antojitos LindaMar and ahnestkitchen are having the busiest weeks, while Jeff Harris and Spirit of Cake are running above their usual pace.
