Beetroot amaranth and chia pearls: We Cook Better's caviar without fish
Two homemade versions, red and black, served on rice crackers with cream cheese, and a lot of love in the comments for someone called Lancy.

One recipe, two caviars. We Cook Better's only upload of the week, "No Fish Caviar – Make It at Home & Enjoy Caviar Every Day," makes red pearls from amaranth simmered in beetroot juice and black ones from chia seeds soaked in soy sauce and lemon. The trick for the red version, the description says, is patience: leave the cooked amaranth in the fridge overnight so the grains stay separate. A sheet of nori brings the taste of the sea.
The comments are a small world tour, written in Russian, French and Portuguese as well as English. One viewer says the black version turned out better than expected. Another will happily take the amaranth but not the chia, on account of the texture. And a surprising number of notes send hugs to Lancy, who seems to be a household favorite, though the video's own description never mentions him.
The real engine of the channel is older. "Stop buying expensive Protein Powder! Make High Protein Powder at Home," posted almost three months ago, has passed 1.2 million views and is still bringing in most of the daily traffic on its own. It is built from split lentils, flaxseed, oats, coconut milk powder and peanut butter powder. A two-powder follow-up from September has settled down to a gentle pace.
Overall the channel ran well below its usual daily views. That puts it in good company: among the cooking channels near its size, That Recipe, Hoopla Recipes and Rosie Maio were all running slower than usual too, while Outdoor Chef Life and Gareth Leonard held close to their normal pace.
