Breanna Stark takes her gumbo roux to dark chocolate
Her patient skillet tutorial has already drawn a much larger audience than her Shorts usually reach in a full first day.
Why this story? The video opened at a pace of 497,045 views a day, 5.5 times a normal first day on this channel (90,180).
Is it dark enough?? Let’s make a roux for a pot of gumbo! 🥘
Breanna Stark recommends grabbing a chair for this part of dinner. Making her dark roux means staying beside the skillet, stirring through a succession of colors and resisting the temptation to hurry.
The gumbo tutorial has reached about 323,000 views in its first eleven hours, already more than three times her usual full-day audience for a Short. After her recent decorated lunchboxes, this upload puts the focus on a slower kitchen task: cooking flour until it gives gumbo its nutty, toasted flavor.
Stark starts with oil and all-purpose flour in a cast-iron skillet. She chooses oil rather than butter because, she explains, butter would burn before reaching the dark stage she wants. The mixture passes through blonde and peanut-butter shades before arriving at milk chocolate. Her cue to remove it from the heat is the shift toward dark chocolate.
"Once you burn your roux, there's no salvaging it. So just grab a chair, get comfy, keep stirring," she says.
Taking the pan off the heat doesn't end the work. Stark keeps stirring as the cast iron cools, then blots away excess oil before scooping the thick paste into cooked vegetables.
That final scrape has become a talking point in the comments, alongside messages from viewers outside the US planning their first gumbo. Stark also posted a chicken-and-sausage gumbo video, giving this carefully browned foundation somewhere to go.
