The kitchen is small. The menus change daily. At Alfie's in Georgetown, Eater finds chefs Justin Ahn and Alex McCoy working through opening week, with market deliveries helping decide what reaches the table.
Their restaurant documentary was the most watched of Eater's four new uploads, reaching roughly a quarter-million views. The steak special supplies the title, "Why Alfie's in D.C. Is Serving Only Five Thai Curry Steak Frites a Night," but the preparation gives the episode its texture: hand-shredded green papaya, slowly cooked pork belly curry and a pre-shift meeting before service begins. Sous chef Ian Ko makes the boundary clear: "We're not going to become a steakhouse overnight."
Elsewhere, the week's uploads form a little chain of chef recommendations. Wenwen's Eric Sze visits Chris Hansell at Chrissy's Pizza; Hansell, in turn, takes Eater to Bread and Salt in Jersey City for sourdough focaccia barese. Another upload returns to Silvia Barban's sweetbread ragù at Brooklyn's Briscola Trattoria, the dish behind her "25K Tagliolini."
Alfie's also has the strongest daily momentum among Eater's videos right now. An older paid partner video about Daniel Chung's move from banking into restaurant ownership remains active, as does Sze's longer "Chef's Day Off" tour, which stretches from an apple-and-Brie baguette to oversized Queens wontons.
Across the channel, daily views are running at more than twice their usual pace, while subscribers were unchanged over the week. Nearby in the food world, Tasting History with Max Miller had a larger weekly audience and added subscribers. Eater's own fresh activity keeps returning to the restaurant work behind the plate, whether that's opening a kitchen or finding somewhere to eat when the shift is over.
