The description makes the case that a lot of cooks leave them behind, and the country cut keeps them riding along with the thighs, with the back saved for stock. One commenter had a word for the cameraman, and another thought the whole method lacked finesse, which tells you how seriously this crowd takes its poultry.
Then, on October 2, pastrami. "Learn To Make The Juciest Pastrami" (the spelling is the channel's) pairs a long smoke with a sous vide cook, the house specialty of a channel that has always treated the kitchen like a lab. The rub is coriander, black pepper and juniper, and there are two timings to pick from: 48 hours at 147 °F, which the description names as the team's favorite, or a leaner 24 hours at 162 °F. You can even swap the order, smoking last for a barkier crust. Twelve hours in, it was past 7,000 views and already the channel's busiest video of the moment.
The salt bread has not gone anywhere, though. "We Cracked the Code on Viral Salt Bread (Shio Pan)," Tim Chin's take on the buttery Japanese roll with a rice flour glaze to keep the crust crisp, is two weeks old and has passed 165,000 views.
Overall the channel is running right about at its usual pace. Among cooking channels of its size, Chef Thomson and Cooking with Shereen are having the loud weeks, while ChefSteps, like Early American and The Stay At Home Chef, keeps a calmer, steady rhythm.
