It is a chicken wrap in the Kolkata street-food style, the newest of four uploads from the Pierrefonds restaurant owner who has spent more than 25 years feeding the West Island.

The week's real news sits in the video about his best seller. À La Carte asked Steve to put one of his recipes in its cookbook, and he picked the Chicken de la Casa. The book is at the printer and due in October, in English and French, and all of its proceeds go to the Montreal Children's Hospital.

The most watched upload, though, is the San Francisco garlic noodles: butter, a lot of garlic, oyster, soy and fish sauce, and parmesan over spaghetti. The dish is closely tied to the An family's Thanh Long restaurant in the city, and several viewers caught Steve giving credit where it belongs. The comments are a cheerful mix: a commenter typing out the full recipe, a memory of the noodles at R&G Lounge, a teasing reminder that the oyster sauce had already gone in, and one line repeated again and again: people came for Steve and stayed for Speezy, the sidekick who closes out the video.

All of it has the channel running well above its usual pace, close to double a normal day. The apple crumble cheesecake from eleven days ago is still adding a steady stream of views of its own. Among cooking channels near his size, Breanna Stark and Louis Howard are also having lively weeks, while Clement Leung is a little quieter than usual.
