Things we can learn from the video

- 0:00Flatten the steak, trim excess fat and cut it into long strips before seasoning.
- 0:23Sear the beef briefly over high heat, then remove it while preparing the sauce.
- 2:00Stir flour into the mushrooms and onions, then add beef broth, Dijon mustard and sour cream.
- 3:38Return the beef to the sauce and add Worcestershire sauce.
- 4:10Boil wide egg noodles in salted water with butter, then serve with the stroganoff.
Sophie gives the beef a brief sear, then sets it aside while the sauce takes shape in the same pan. Onions, mushrooms and garlic go in before broth, Dijon mustard and sour cream turn them into the creamy base for Essen Recipes' latest dinner.
Despite its title, "The Most Famous French Recipe, Prepared in a Simple Way!", the dish is beef stroganoff, served over wide egg noodles. A small kitchen confession arrives when the beef returns to the pan: the on-screen instructions add Worcestershire sauce with a note that Sophie almost forgot it.
That was the channel's only new upload this week, reaching nearly 96,000 views. The comments have become a recipe exchange of their own: viewers discuss velveting cheaper beef cuts, choosing richer sour cream, adding broccoli and serving stroganoff with rice. Others ask for more of Sophie's voiceovers, remembering the calming sound of her earlier videos.
Across the channel, daily viewing is running noticeably above its usual level, while the subscriber total stayed unchanged over the week. Jamie Oliver is also seeing stronger-than-usual daily viewing nearby in the cooking group; Guga Foods had a particularly busy week, while The Food Theorists is running below its usual daily level.
For Essen Recipes, the strongest current draw remains October's chicken fricassee, now past 1.2 million views and adding views faster than the stroganoff. Swedish meatballs are active too: three different dinners, with a creamy sauce at the center of each.

Since I usually use a cheaper cut of beef when making a stir fry or stroganoff I always velvet the strips ahead of time. I always make sure my sour cream is the good stuff, 14% as opposed to 5%. Love and respect, sister, from Canada. ❤
