Essen Recipes has passed 1.27 billion lifetime views, a total Sophie built one weeknight dinner at a time on a channel she describes as simple, tasty and often vegetarian or budget-friendly.

This week brought a single new recipe. Its title tells you to stop frying eggs, and the description explains what to do instead: shrimp, eggs and vegetables cooked together in a rich tomato sauce, all in one skillet, with bread on the side for the last of the sauce. Sophie pitches it for any hour, from breakfast to an easy dinner. In five days it has gathered close to 60,000 views.

The busiest video on the channel is still an older one. "I Make Chicken Just for This Sauce!" went up about three months ago, and the creamy paprika chicken over buttery mashed potatoes is drawing views faster than the new shrimp dish, now well past 400,000. A one-pan instant ramen finished with melted Gruyère, seven weeks old, is the third video still picking up regular plays. Perhaps comfort food simply travels well into autumn.

Among the cooking channels nearest her in size, Nick's Kitchen and Great Big Story are both running above their usual pace, while Ha Sisters and The Food Theorists are a little quieter. Sophie sits in the middle of that group by subscribers, with the chicken and its sauce still doing most of the work.
