Cowboy butter, whisky ribs and a Pendleton Round-Up burger for Derek Wolf

Derek Wolf's about text promises three recipes a week, and this time he went one better. Four went up, and two of them trace back to a single trip: the Pendleton Round-Up, the long-running Oregon rodeo, which he visited with Pendleton Whisky.

The Let'er Buck Burger is the direct souvenir, named for the rodeo's old rallying cry and built, in his words, to be worthy of the buckle. It is a smash burger with bacon, onion rings and a whisky barbecue sauce with candied jalapeños. The same whisky turned up a day later in the braise for his smoked party ribs, single bones cut apart before they ever see the smoker.

The oddest build of the week is the cowboy butter skewers, which stack thin potato slices and seasoned ground beef into a tower on a skewer, cook it gently and then sear it over the hot coals. It has done well, passing 140,000 views in a few days.

The newest upload is moving fastest. Honey chili oil wings, smoked over hickory and then dropped into a Dutch oven of oil for a quick fry, are gathering views faster than anything else on the channel barely half a day in.

Two older recipes are keeping pace with them. His version of the Peter Luger steak, smoked low and then seared in a pizza oven before being sliced and doused in garlic butter the way the Brooklyn steakhouse serves it, has passed 1.3 million views. Hot honey pizza sausage skewers, posted nineteen days ago, are past three million.

Among the cooking channels closest to him in size, he sits third of nine by subscribers, just behind Flavor Hive and Helly's Simple Recipe.
