Pistachio pesto, mortadella and stracciatella: Gluten Morgen's pizza nears five million
No new bakes went up, and the sourdough channel's total climbed past 102 million views, carried mostly by one seven-week-old pizza.

Gluten Morgen has gone past 102 million views in total, and the pizza doing most of the carrying is not even made with sourdough. "Pistacchio Pesto & Mortadella Pizza", posted 47 days ago, is closing in on five million views. It still brings in far more viewers each day than anything else on the channel.
The method is a small trick in itself. The base bakes first, with ice cubes on it so it does not puff up in the oven. The pesto (basil, pistachio, Parmesan and garlic) goes on cold, because it is meant to stay uncooked. Then comes mortadella with pistachio, draped like a handkerchief, then stracciatella, then more pistachio. The description admits it is a lot of pistachio and asks who could object.
The slower, nerdier video is the one that fits the channel's own promise to sourdough bakers. "4 Ancient Grains — No Modern Flour Added" bakes Red Fife, spelt, einkorn and rye, each in a cast iron pot and again in a deck oven. Along the way it tells each grain's story: a Red Fife line said to survive from a single head a cow missed, and einkorn domesticated near Göbekli Tepe, with a dough that feels like clay.
Nothing new went up in seven days, yet the channel ran well above its usual daily pace and picked up about a thousand subscribers. Among the cooking channels nearest its size it sat mid-table for the week's views, while Street Cents, Broccoli Mum and Cooking With Volk had the big weeks and Sourdough Enzo stayed quiet.
