Fried pickles, owl omens and a second season of Cast Iron Cowboy

Kent and Shannon took the chuck wagon back to the Outdoor Channel on September 28, between a frontier superstitions sequel and an all-purpose fry batter.

Why this story? The channel's weekly summary: what went up this week, what is drawing views now, and where the channel stands among similar channels.

There is no usual daily pace to set against this week, so the cooking will have to speak for itself. And it spoke quickly: Kent Rollins's newest recipe, a country fry batter he puts to work on pickles, pork chops and, judging by the tags, a chicken fried steak with gravy, passed 80,000 views in its first nine hours.

The batter arrived at the end of a week that had a bit of everything. Kent posted the second part of Cowboy Superstitions, which wanders from ominous owl calls and La Lechuza, the owl-witch of South Texas folklore, to Irish fairies and military taboos, tracing how Native, Tejano, Irish and soldiers' beliefs found their way into the Old West. In between came news rather than food: Season 2 of Cast Iron Cowboy, his show with his wife Shannon, premiered on the Outdoor Channel on Monday night, September 28, with the chuck wagon back on the road. For everybody asking how to stream it, the clip points to MyOutdoorTV, where the new season begins on October 2.

Older dishes are still being served, too. Last week's King Ranch Chicken, billed as a Texas casserole with a story behind it, is close to 400,000 views, and a blooming onion from late August, tagged as better than the steakhouse version, has passed 1.3 million. Deep frying, it seems, is a reliable season on this ranch.

Among the food channels around him, You Suck At Cooking is the one having the big stretch, running well above its usual pace, while More Best Ever Food Review Show keeps close to its normal stride.
