One fork does the work in ChefSteps' smashed potatoes
Fingerlings, butter, cream and late-added chives make up the channel's only new recipe of the week.

The Creamiest Smashed Potatoes!
Do creamy potatoes really need a ricer, a mixer or another gadget to wash? ChefSteps' answer is a fork, provided you leave a little texture behind.
In "The Creamiest Smashed Potatoes!", whole, unpeeled fingerlings start in cold, generously salted water. Once tender, they go back into the warm pot with cream and butter for a fork mash. The aim is deliberately rustic: small chunks and bits of skin, not a perfectly smooth purée. Chives go in at the end to keep their green color.
The butter gets its own moment of acknowledgment. "I mean that's a lot of butter for that much potato," the chef says, surveying the ingredients. The upload has reached roughly 8,700 views. Beneath it, viewers offer their own kitchen variations: scallions simmered in milk for Northern Irish champ, garlic added during boiling, and a potato masher instead of the fork.
Across the channel, subscribers held steady while daily views ran a little below their usual level. Among similarly sized cooking channels, NOT ANOTHER COOKING SHOW is enjoying an above-usual daily audience; ChefSteps has had a more modest week.
The busiest current draw is September's "We Cracked the Code on Viral Salt Bread (Shio Pan)", now past 220,000 views. Chef Tim Chin's rolls take a more engineered route than the potatoes: butter fries the bottoms during baking, while a gelatinized rice flour glaze helps preserve the crisp exterior. Minimal equipment for dinner, a little starch science for the bread basket.

Put scallions (spring onions) into it instead of chives it’s absolutely delicious. Just chop up the scallions simmer them in some milk then add to your potatoes. In N.Ireland we call it CHAMP
