Nearly 400 million lifetime views sit behind James Hoffmann's channel, and none of them came from anything new this week: nothing went up. The older videos carried on without him.

The busiest of them is a five-month-old essay on a drink most coffee people barely think about. "The Truly Absurd Secrets of An Incredible Americano" treats the humble espresso-and-water as a problem worth solving, from the water itself to skimming off the crema, degassing the shot and side-by-side tastings. It also wanders into two variations: an iced "Aerocano" made by steaming water over ice, and a version where the espresso and water are steamed together in the pitcher. Hoffmann, who wrote The World Atlas of Coffee, has long made a speciality of taking the ordinary seriously, and this one is still finding its audience.

Close behind is his seven-week-old review of the Fellow ES1, a first-generation espresso machine he walks through chapter by chapter, from lever-style pressure profiling to a ramp-down function that does not quite behave. Then comes "Taste Coffee With Me For The Last Time," the recording of a live tasting from four weeks ago, its title as final as it sounds.

Among the food channels nearest his size, The Plant Slant is the one having the big stretch, running at more than twice its usual pace, with Fallow and Ian Fujimoto also busier than normal. Hoffmann, fourth of nine by subscribers, is letting an Americano do the talking.
